Ingredients:
2 cups all-purpose flour
1/2 teaspoon salt
1/2 cup creamy peanut butter
1/2 cup light brown sugar
1/3 cup buttermilk
2 eggs
3/4 teaspoon baking soda
3 medium bananas, mashed
1/2 cup granulated sugar
1/4 cup vegetable oil
2 teaspoons vanilla extract
1 cup semisweet chocolate chips
Directions:
1) Preheat your oven to 350 degrees Fahrenheit. Take an 8x4-inch bread loaf pan and line with parchment paper so it hangs over the two long sides.
2) In a large bowl, whisk flour, baking soda, and salt
together. Set this mixture aside.
3) In another large bowl, whisk banana, peanut butter,
sugars, buttermilk, oil, eggs, and vanilla together until smooth.
4) Pour wet ingredients into flour mixture and fold together
until completely combined and there are no lumps left. Gently stir in chocolate
chips.
5) Pour batter into bread pan, smoothing the top. Bake until
golden brown and a toothpick inserted into the center comes out with just a few
moist crumbs. This will take about 1 hour to 1 hour and 15 minutes. If your
bread browns too quickly, place a tented piece of tin foil over it.
6) Allow bread to cool in pan for 10 minutes, then cool
completely on wire rack. Once cool, bread can be tightly wrapped in plastic
wrap and stored for up to 5 days at room temperature.
